I have the perfect pair of recipes to share with you all today: Chai Tea Mix and Pumpkin-Cranberry Biscotti. They're just the thing to whip up if you're in the mood to sit down for some tea and treats on this gorgeous fall day. And they make lovely gifts for the holidays, too. Just in case you're already thinking ahead...
As you can see, the dining room is all set and ready for your visit. Just come on over! In the meantime, here are this week's recipes and a peek at the finished products ... while they last.
Pumpkin-Cranberry Biscotti
2 1/2 cups flour
1 cup sugar
1 tsp baking powder
1 heaping tsp pumpkin pie spice
pinch salt
2 eggs
1/2 cup canned pumpkin
1 tsp vanilla extract
1 cup dried cranberries (or chocolate chips)
Preheat oven to 350ยบ. Sift the flour, sugar, baking powder, salt, and spice into a large bowl.
In another bowl, combine remaining ingredients together and add to the flour mixture. Add cranberries. Give everything a rough stir. The dough will be crumbly.
Flour your hands and a clean kitchen surface. Knead dough gently until it softens a bit and is less crumbly. This usually takes just a minute or two. Lightly spray a baking sheet. Form the dough into a large log (about 15"x 6") and then place on the pan. Flatten gently with your hands to a thickness of 1/2" or so. Bake for 22-30 minutes until center is firm to the touch.
Let the biscotti cool for 15 minutes and then slice into 1" wide pieces using a serrated knife. Place the biscotti back on the pan and bake for another 20 minutes. When cool store in an airtight container. If you prefer very crisp biscotti, leave unwrapped overnight and then store.

2 cups french vanilla powdered creamer
1-1 1/2 cups sugar or Splenda
1 1/2 cups unsweetened instant iced tea powder
1 tsp each: ginger, cloves, and nutmeg
4 tsps cinnamon
1/4 tsp pepper
Combine all ingredients in a large bowl. Blend in your food processor (in two or three batches) until you have made a fine powder. Store in an airtight container.
••• This recipe makes more than enough to fill one large cookie tin. Use about 2T per each mug of tea, depending on your taste preferences. •••

I have the Pumpkin Biscotti baking in the oven as I type this and my home smells wonderful. Thank you for posting the recipe. It was way to hot to have hot tea here in the south so I will have a cold class of tea with my Biscotti tonight! Gotta run as my oven buzzer is calling me....

I would have never thought of a pumpkin and cranberry combination, but it sure does look good.
I find a hot cuppa and a bikkie at the end of a long day is so relaxing, just the thing to re-energise me before I head into the night routine of dinner, baths and bed for the children.

Oh, you'll never guess how sweet you are!! I introduced my young mother-of-3 neighbor (who shall remain nameless) to your blog just after I found it only a couple of weeks ago and this morning (like at 8 AM!!) she RAK'd me with a tin of biscotti and a jar of chai tea mix, she double the recipe just to give me half. The little note said "Compliments of 'And Baby Makes Five' and (names of her children)". She knew I would love these two recipes, but I'm not able to be in the kitchen myself, so how cool is that.
